Okra + Shrimp + Paneer = Weird Kuras Brought to You By Lady Vienna

Hi Readers,

So since working I haven't been on top of my blogging like I should be. I just got yelled at today because I haven't been writing on a regular basis. Yes, I was reprimanded. It wasn't very nice. You know who you are!! Anyways, I think I'll try and set a goal of blogging once a week. It's not exactly a tall order, but it's something I need to follow through on.

I have a tendency of not buying fresh vegetables. I have nothing against vegetables because I do love them; seeing as which they are a prominent part of my diet. I just get the frozen vegetables and work with them. Cue my current dilemma, I have so many veggies, little energy and no idea what to make. After staring at the freezer, I thought to make something with some of my favorite ingredients: paneer, okra and shrimp.

I learned this from my mom, and I am sure she is not the only one, to take random things from the fridge (or freezer) and throw them together into a random dish that will then sustain the family for at least the night. Often she would do this. Did I always eat them? No. Even now I don't always eat them, but I at least appreciate the inventiveness. Yes, I am picky. Ideal for food blogging.

Check out the recipe below.

Okra Shrimp Paneer Kura
  • Shrimp (cut into thirds, it gives the illusion that there is more food)
  • Okra
  • Pre-fried frozen paneer
  • Splash of milk
  • Salt
  • Red Chili Powder
  • Turmeric
  • Masala powder of your choice
  • Hing powder
Directions
1. In a pan, heat oil and add hing powder.

2. Add the okra and paneer. Season with masala powder, salt, turmeric, chili powder and salt. Add a splash of milk and cook until the okra is full cooked.

3. When the okra is cooked and the milk has evaporated, add the shrimp. Cook until the shrimp is tender and not overdone.

Ease: Easy
